A nutrient packed meal that is comforting and delicious.
Serves: 11, Prep Time: 30 minutes, Total Time: 45 minutes.
1 tbsp. olive oil
½ tsp. ground cumin
1 ½ cups of cubed peeled sweet potatoes
1 cup diced red bell pepper
1 cup diced onion
2 garlic cloves
1 jalapeno pepper (seeded and minced)
2 cups cooked chicken
1 cup of salsa
2 cups of chicken broth
2 cups of organic chicken and rice
1 can black beans (drained)
⅓ cup sugar free organic creamy peanut butter
Heat olive oil in a Dutch oven or pot over medium-high heat until hot.
Add cumin, sweet potato, onion, bell pepper, garlic, and jalapeno. Saute for 5 minutes.
Stir chicken and rest of ingredients except peanut butter. Bring to a boil. Reduce heat, simmer for 10 minutes.
Add in peanut butter stirring with a whisk: cook 2 minutes.
