Breakfast Egg Salad

Delicious way to get your greens first thing in the morning!

Serves: 1, Prep Time: 10 minutes, Total Time: 15 minutes.


  • 2 hard boiled eggs

  • 1 tbsp. dijon mustard

  • 1 tsp. apple cider vinegar

  • Salt and pepper ( to taste)

  • 2 cups dark leafy greens

  • 6 cherry tomatoes (sliced)


  1. Boil Eggs. Mix Dijon, apple cider vinegar, and salt and pepper.

  2. Add egg mixture on top of dark leafy greens.

  3. Top with tomatoes. Enjoy!

Chef's Tip: A great addition to this egg salad would be: avocado, cilantro, roasted sweet potato, or chopped bacon.
