Breakfast Egg Salad

Delicious way to get your greens first thing in the morning!

Serves: 1, Prep Time: 10 minutes, Total Time: 15 minutes.
Ingredients
2 hard boiled eggs
1 tbsp. dijon mustard
1 tsp. apple cider vinegar
Salt and pepper ( to taste)
2 cups dark leafy greens
6 cherry tomatoes (sliced)
Directions
Boil Eggs. Mix Dijon, apple cider vinegar, and salt and pepper.
Add egg mixture on top of dark leafy greens.
Top with tomatoes. Enjoy!
Chef's Tip: A great addition to this egg salad would be: avocado, cilantro, roasted sweet potato, or chopped bacon.
