Cauliflower Stew

Yummy vegan stew!











Serves: 4, Prep Time: 15 minutes, Total Time: 45 minutes.


Ingredients

  • 1 medium onion

  • 1-2 jalapeño (steamed or roasted)

  • 1 tsp. ginger

  • 1 tbs. coriander

  • 1 tsp. turmeric

  • 1 cup full fat coconut milk

  • Sea salt and pepper

  • 1 medium head cauliflower (steamed or roasted)

  • Cilantro to season


Directions

  1. Heat coconut oil on the stove.

  2. Add in onion and jalapeños. Cook for 5 minutes.

  3. Add in ginger, coriander, and turmeric. Stir well.

  4. Add in coconut milk and season with sea salt and pepper.

  5. Add in cauliflower. Simmer for 5-10 mins.

  6. Top with cilantro. You can serve it by itself or with rice.
