Yummy vegan stew!
Serves: 4, Prep Time: 15 minutes, Total Time: 45 minutes.
1 medium onion
1-2 jalapeño (steamed or roasted)
1 tsp. ginger
1 tbs. coriander
1 tsp. turmeric
1 cup full fat coconut milk
Sea salt and pepper
1 medium head cauliflower (steamed or roasted)
Cilantro to season
Heat coconut oil on the stove.
Add in onion and jalapeños. Cook for 5 minutes.
Add in ginger, coriander, and turmeric. Stir well.
Add in coconut milk and season with sea salt and pepper.
Add in cauliflower. Simmer for 5-10 mins.
Top with cilantro. You can serve it by itself or with rice.
