Chicken Vegetable Soup

A warming, nutrient-dense chicken soup with a twist!
















Serves: 8, Prep Time: 20 minutes, Total Time: 80 minutes.


Ingredients

  • 2 quarts homemade chicken stockholm

  • 2 cups cooked organic chicken (shredded & chopped)

  • 4 cups organic marinara sauce

  • ¼ cup white wine

  • 6 cloves garlic (chopped)

  • 1 onion (diced)

  • 2 shallot (diced)

  • 1 stalk organic celery (diced)

  • 2 large organic carrots (diced)

  • 1 tbsp. dijon mustard

  • 1 tbsp. parsley flakes

  • 1 tsp. thyme

  • 1 tbsp. turmeric

  • 2 cups organic frozen vegetable medley

  • 2 cups fresh kale (chopped fine)

  • Finely grated parmesan cheese (optional)


Directions

  1. Combine onion, shallot, celery, and carrot to a well-oiled soup pot and cook over medium heat until soft.

  2. Add mustard, parsley, thyme, white wine and chicken and simmer for 3-5 minutes.

  3. Whisk in marinara, stock, turmeric, and garlic and simmer for 30 more minutes.

  4. Ten minutes before it's ready to serve, add frozen mixed vegetables.

  5. Cook 5 minutes before adding kale.

  6. Serve with Parmesan.
