Freezer Meal to Instant Pot Cauliflower Curry

A delicious vegetarian dish full of nutrients










Serves: 6, Prep Time: 20, Total Time: 6 minutes.


Ingredients

  • 2 cups of butternut squash

  • 1 onion

  • 2 cloves of garlic

  • ½ cup red lentils

  • 1 can diced tomatoes

  • 1 can coconut milk

  • 2 cups of cauliflower

  • 3 tbsp. of curry paste

  • 1 tsp. turmeric

  • 1 tsp. salt


Directions

  1. Put all ingredients in a gallon freezer bag. Freeze.

  2. Put the freezer bag directly in the instant pot with 1 cut of chicken broth.

  3. Cook on high pressure for 6 minutes and quick release.


Chef's Tip: Use less or milder curry spice for less spicy.
