Healthy Slow Cooker Red Beans and Rice

A yummy slow cooker meal.











Serves: 4, Prep Time: 10 minutes, Total Time: 6.5 hours.


Ingredients

  • 2 cups red kidney

  • 1 cup long grain brown rice

  • 1 red or yellow onion

  • 1 green pepper

  • 2 celery stalks

  • 8 garlic cloves

  • 2 tbsp. cajun seasoning

  • 1 tbsp. smoked paprika

  • 1 tsp. salt

  • 6 cups boiling water


Directions

  1. Add everything to the slow cooker on low heat and stir together.

  2. Cook for 6-8 hours and serve.


Chef's Tip: Add andouille or turkey sausage, and ham if you'd like! Can substitute 4 cans of kidney beans (drained and rinsed)
