A fancy meal that you can make at home!
Serves: 4, Prep Time: 5 minutes, Total Time: 15 minutes.
8 tbsps. olive oil
6 tbsps. orange juice (use tbsp. to zest)
2 tbsps. lime juice
2 small shallot (finely chopped)
1 tbsp. Cilantro (chopped)
⅛ tsp. chili flakes
1-2 tbsps. olive oil
Salt and pepper to taste
In a small bowl, combine and mix 8 tbsp olive oil, 4 tbsp orange juice, lime juice, shallots, cilantro, and chili flakes. Set aside.
Heat 1-2 tbsp olive oil in a large skillet over medium-high heat. Season the oil with salt and pepper.
Add the patted dry scallops and sear for 1-2 minutes until golden. Turn over.
Spoon flavorful dressing over the scallops. Serve with green beans or asparagus cooked your favorite way!
