Spring Salad with Mushroom Radishes

A delicious salad topped with a citrus dressing!

Serves: 4, Prep Time: 10 minutes, Total Time: 12 minutes.


  • 3 cups dark leafy greens (I like Swiss Chard)

  • 8 radishes

  • 8-10 segments of oranges

  • 8 tbsps. olive oil

  • 4 tbsps. orange juice

  • 2 tbsps. lime juice

  • 2 small shallot (finely chopped)

  • 1 tbsp. cilantro (chopped)

  • ⅛ tsp. chili flakes


Citrus Dressing

  1. Combine and mix olive oil, orange juice, lime juice, shallots, cilantro, and chili flakes.


  1. Cut up dark leafy greens with small kitchen scissors.

  2. Cut up radishes or make into cute mushroom radishes insert video on how to make mushroom radishes (link below).

  3. Combine greens, radishes, and oranges. Mix with citrus dressing and serve!
