A yummy and healthy salad!
Serves: 4, Prep Time: 5 minutes, Total Time: 15 minutes.
3 medium zucchini (spiralized)
½ cups black olives (sliced)
1 15 oz. can artichoke hearts (drained & diced)
1 cup cherry tomatoes (halved)
½ cup crumbled feta cheese
Salt and pepper to taste
¼ cup sun-dried tomatoes (oil packed)
2 tbsp. balsamic vinegar
2 tbsp. water
1 clove garlic
¼ cup olive oil
Combine zucchini, olives, artichoke hearts, cherry tomatoes, and feta cheese (optional) into a large bowl.
Mix ingredients, add salt and pepper to taste.
In a separate bowl, combine oil-packed sun dried tomatoes, balsamic vinegar, water, garlic, and olive oil. Add salt and pepper to taste and mix ingredients.
