Delicious and stocked full of superfoods.
Serves: 4, Prep Time: 10 minutes, Total Time: 40 minutes.
1 tbsp. coconut oil (you can use alternative)
1-2 cups oats
1-2 cups coconut milk (you can use alternative)
2 tbsp. chia seeds
2 tbsp. flax seeds
1 tsp. cinnamon
1 tsp. vanilla
1 cup frozen mixed berries
3 tbsp. crushed nuts (optional)
1 ½ tsp. inulin (optional)
1 tsp. honey (optional)
1 tbsp. coconut flakes (optional)
Preheat to 350°F. Coat bottom of pan with coconut oil. Smash banana in bottom of pan and cover as best possible.
Add 1-2 cups of oats depending on how much you want to make. Add same quantity of milk alternative. Add 1-2 cups of coconut milk to pan. Add 1 tsp. of cinnamon. Add 1 tsp. of vanilla. Stir all ingredients.
Add 1 ½ tsp. of inulin (powered chicory root and extra fiber). This is optional. Add 1 cup of frozen berries. Top with crushed nuts and coconut flakes (optional).
Bake at 350°F for 20-30 minutes. After baking, add the yogurt and honey (optional).
