Healthy alternative to other breakfast foods, this is a light fresh breakfast to start your day and boost your energy.
Serves: 4, Prep Time: 5 minutes, Total Time: 12 minutes.
1 ripe banana
1 tsp. vanilla or vanilla bean powder
¼ green apple, sliced
1-2 tbsp. almond butter
1-2 tbsp. dried coconut flakes
1 tsp. cinnamon
Coconut oil for cooking
Using a fork, mash the ripe banana and mix it with the eggs and vanilla in a bowl. The batter will be lumpy.
Great a skillet with coconut oil and turn the stove to medium heat. Add the lumpy batter and with a spatula, continue to mask and stir the mixture.
Once cooked, remove from the skillet and place in a bowl. Top with apple, almond butter, coconut flakes, and cinnamon.
