Apple Cranberry Crisp

A yummy apple and cranberry crisp with white wine and olive oil!

Serves: 4, Prep Time: 20 minutes, Total Time: 50 minutes.


  • 4 Fresh squeezed oranges

  • 1 cup white wine

  • 12 oz. fresh cranberries

  • ¾ tsp. cinnamon

  • ½ tsp. ginger

  • ¼ tsp. nutmeg

  • ⅛ tsp. cloves

  • ¼ tsp. salt

  • 1 ½ lbs. gala apples

  • 1 tsp. vanilla

  • 1 cup crushed pecans

  • 3 tbsp. coconut butter

  • 2 tbsp. lemon juice


  1. Heat oven 350°F.

  2. Mix all dry ingredients and set aside.

  3. In a saucepan combine wine, orange juice and sugar (if using) and bring to a boil. Add cranberries and bring to another boil. Cook for 2 minutes. Turn off heat and add olive oil.

  4. Core and cut apples and put in a 9x13 glass dish that is oiled with 1 tablespoon of coconut butter, add and mix dry mixture, lemon and vanilla into dish. Drizzle melted the remainder of the coconut oil on top of the dish.

  5. Top with crushed pecans. Bake for 30 minutes.

Chef's Tip: You can use apple cider or balsamic vinegar instead of white wine. If so, use ½ amount of vinegar! Play around!
