A yummy mushroom gravy!
Serves: 8, Prep Time: 15 minutes, Total Time: 15 minutes.
1 tbsp. olive oil
½ cup chopped onions
1 tsp. dried thyme
¼ tsp. salt
8 oz. sliced mushroom
1 cup dry sherry (optional)
3 cups vegetable broth
2 cups water
2 tbsp. ghee
1 ½ tsp. arrowroot flour
Saute onions in ghee (about 5 minutes).
Add seasoning and mushrooms. Add sherry and cook until liquid evaporates.
Stir in broth. Bring to a boil.
Reduce heat to simmer and cook for about 14 minutes until liquid is reduced.
Stir flour and water together. Whisk until thick.
