A delicious and simple whole roast chicken for your favorite holidays.
Serves: 4, Prep Time: 30 minutes, Total Time: 1 hour 15 minutes.
1 farm-raised chicken
Freshly ground pepper
2 tsp. fresh thyme or your favorite seasoning
Preheat oven to 450°F.
Rinse the chicken, then dry very well inside and out.
Salt and pepper the cavity of the bird.
Tie up the legs with string (how to link).
Salt the bird on the outside.
Place chicken in a roasting pan.
Roast until done, about 50-60 minutes.
Remove from the oven and add fresh thyme.
Baste chicken with juices.
Allow to rest for 15 minutes.
